Beef Short Ribs
We source premium pasture fed beef from Tasmania’s Cape Grim, slow cook over iron bark for 9 hours until moist and fall-off-the-bone tender.
Brisket Cheese Burger
Premium beef brisket, slow cooked with seasoned Ironbark at 250f until perfect, sliced thick and served with bacon, cheese, pickles and 3 sauces on a brioche bun.
Everyone’s favourite, but have you tried pork ribs done right? Rubbed and low n’ slow baked for 5 – 6 hours. No sauce required. Tender juicy perfection!
After trying traditional Texas barbecue for the first time a few years ago, we were addicted. This addiction turned into a passion and we decided all Queenslanders should have the opportunity to eat great low n’ slow Texas-style barbecue. After running events and pop-ups around Brisbane, we have opened the first Billy’s BBQ Shack in the foodie precinct of Kyling Corner Cleveland.
Sourcing the best produce and ingredients, treating them with respect and nurturing for hours results in great “Que”. A Texas tradition for almost 200 years, is available right here in Cleveland Queensland, 5 days a week. Come on down for some great BBQ.
As well as traditional Texan fare, we like to experiment with Australian staples, like lamb shoulder, or amping things up with a gourmet twist. We are always experimenting and trying new things, there is always something new and fresh at Billy’s BBQ.
